LEADING chef, author and Welsh native Bryn Williams will be leading the culinary charge at the first Welsh Game Fair event, which will be held at the Vaynol Estate in Bangor from September 9-11.
Bryn will be creating a bespoke menu for guests in the VIP Enclosure restaurant and taking part in live, open-air cooking demonstrations throughout the weekend.
Bryn is regarded as one of Wales’ best chefs, has hosted several successful cooking series with Welsh-language television channel S4C and is a passionate advocate for sustainable, field-to-fork fare.
The GWCT (Game & Wildlife Conservation Trust) Welsh Game Fair is set to be a spectacular celebration of Welsh field sports, conservation and heritage.

Bryn, who hails from Denbigh, has worked in some of the most prestigious kitchens in London including tenures working under Marco Pierre White at The Criterion and Michel Roux at Le Gavroche.
Now the chef patron of Odette’s in Primrose Hill and at Porth Eirias, a beach-front restaurant, café and bar on the North Wales coast, Bryn has also produced three books sharing his in-demand recipes with legions of fans.
The VIP Enclosure, which is sponsored by jewellery brand Clogau Gold, will house the on-site restaurant, which is open for breakfast and lunch, accommodating up to 200 diners at one time.
Bryn will be creating bespoke breakfast and two- and three-course lunch menus to delight VIP ticket holders, with a focus on game and sustainable ingredients, and will mingle with guests in the VIP Enclosure on all three days of the event.
Bryn said: “I was delighted to see that Wales is getting its own game fair to celebrate the amazing culture, countryside and produce that the country is rightly so proud of, and I had no hesitation in saying yes when I was asked to be involved.
“Creating a bespoke menu of delicious dishes using game and other local ingredients is an exciting challenge that I’m enjoying getting my teeth into.
“Roll on September and the start of something really special for Wales!”
